Chicken Pesto Meatballs

Ingredients:

  • 500g Minced Chicken
  • 3 tbs Green Pesto
  • 1 Carrot (grated)
  • 1/2 Red Capsicum (finely diced)
  • 1/2 Onion (finely diced)
  • 1 & 1/2 cups Breadcrumbs
  • Pinch of Salt

Method:

  1. Turn oven on to 200°C
  2. Cover a baking tray with baking paper and have at the ready
  3. Add chicken mince, pesto, salt, carrot, capsicum & onion to a large bowl
  4. Mix well (Hands work best)
  5. Take a small pinch of mixture (approx 1 tsp)
  6. Roll between hands for form meatball
  7. Place on baking paper/tray
  8. Repeat until all mixture is used, making sure the meatballs are evenly spaced (approx 1 cm) apart
  9. Place tray of meatballs into oven
  10. Bake for 10 mins
  11. Turn each meatball with a pair of tongs
  12. Bake 10 more mins
  13. Serve!

Notes:
Grating the onion instead of dicing is great for flavour but hell on the eyes
